2 steps to roast lobster tails

Couple weeks ago I  tried to cook lobster tails for the very first time. I used a recipe  from Youtube channel-Food wishes . Food wishes is by far my favorite food channel on Youtube, I learned a lot techniques and recipes from Chef John. He can explain something seems very complicate to a simple version. He’s very funny, plus all of his videos are quite short, makes the learning process easier. Food wishes  enhanced my knowledge to different kinds of cuisines and improved the quality on my home table! There are more lobster recipes available on his channel. Starter’s High Way-The Middle Cut and Stuffed Seasoning

I have 3 concerns before I cooked them:1, How to clean them, 2 How to seasoning them 3,How to cook them through without burning or drying. I want a fully cooked lobster tail with light seasoning.

I used  2 important techniques that Chef John presented in this video, I call them “the middle cut” and “stuffed seasoning”.  I have no idea what are the accurate names for those techniques.If anyone knows, please tell me,thank you! By the way, stuffed seasoning also works great on fish, poultry,pork chops basically everything…

With those 2 steps, even though I didn’t follow the whole recipe my lobster tails turned out quite tasty. I bought this twin pack on Amazon Fresh for a sale price $5, it is no longer available anymore. But Whole foods carries this brand for $9.99. Still a reasonable price actually.

The Middle Cut 

Lobsters have hard shells make it hard to clean, and lots of home cooks don’t have a whole set of professional tools. Here comes the “middle cut” technique to rescue~ You just cut from the middle, make a small hole then straight  towards sides.

I couldn’t take all the pictures in kitchen when I was cooking. For better introductions, here are 2 screen shots from Food wishes::Deviled Lobster Tails – Spicy Broiled Lobster Tails Recipe.

As you can see Chef John used a heavy duty knife which I don’t have. I just used a regular one,  cut in the lines on the shell, once I made a small hole had no problem cutting  whole shell through.


Once I got to the place in the picture, it was very easy to wash off all the dirty.

Stuffed Seasoning

After cleaning, pull the meat almost off  but not entirely.we will use the shell as a tiny dish to hold all the seasoning.

I made a short cut from “deviled lobster tails” to “soy sauce and ginger spice”

Here is my seasonings: Greens onions, soy sauce, ginger powder, 1:1:1. And a little hot sauce. Brush all the seasoning on the tails, leave all the extra sauce in the shells. Preheat the oven to 425F, place tails in the center of oven for 15 minutes.The lobster tails were cooked through without drying. Rest them for at least 5 minutes before serve.

For final presentation, lettuce salad at the bottom, angle hair with pepper jack cheese,onion salt in the middle.And lobster tails in the center on top.Fresh orange slices around whole dish. With a handful of cilantro.

The whole process took me about 30 minutes. I found it was fun and easy to make this dish. I plan to make this one a regular dish on my home table~
